Ingredients

Main Ingredients
  • 6 large large eggs Use farm-fresh or organic eggs for the best flavor.
  • 1 pound breakfast sausage Choose your favorite brand.
  • 1 cup shredded cheddar cheese Opt for a sharp cheddar for enhanced flavor.
  • 1/2 cup diced bell pepper Any color works, but red or yellow add sweetness.
  • 1/4 cup diced onion White or yellow onions sweeten as they cook.
  • 1/4 cup chopped fresh cilantro Adds brightness; swap with green onions if desired.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Freshly cracked provides the best flavor.
  • 6 large flour tortillas Look for high-quality, thicker tortillas.

Method

Preparation
  1. Preheat your skillet: Place a large skillet over medium heat and allow it to warm up for about 2-3 minutes.
  2. Cook the sausage: Crumble the breakfast sausage into the skillet. Cook for approximately 6-8 minutes until browned and no longer pink, breaking it apart with a spatula.
  3. Whisk the eggs: While the sausage is cooking, whisk the eggs in a bowl and season with salt and pepper.
  4. Prepare the veggies: Once the sausage is cooked, remove it from the skillet and set aside. In the same skillet, add diced bell pepper and onion. Cook until softened, about 3-4 minutes.
  5. Scramble the eggs: Pour the whisked eggs into the skillet with the vegetables. Gently stir to scramble until just cooked but still creamy.
  6. Combine ingredients: Add the cooked sausage back to the skillet and sprinkle the shredded cheddar cheese on top. Allow the cheese to melt slightly.
  7. Finish with cilantro: Remove from heat and stir in the chopped cilantro.
  8. Assemble your burritos: Lay a tortilla on a clean surface. Spoon a portion of the mixture onto the tortilla, fold the sides over, and roll tightly.
  9. Repeat and serve: Repeat with remaining tortillas and filling. Serve warm or wrap in foil for later.

Notes

Ingredient quality matters for improved flavor. Store wrapped burritos in the refrigerator for up to 5 days, or freeze for up to 3 months. Reheat in the microwave or oven before serving.
