Preparation
- Preheat your skillet: Place a large skillet over medium heat and allow it to warm up for about 2-3 minutes.
- Cook the sausage: Crumble the breakfast sausage into the skillet. Cook for approximately 6-8 minutes until browned and no longer pink, breaking it apart with a spatula.
- Whisk the eggs: While the sausage is cooking, whisk the eggs in a bowl and season with salt and pepper.
- Prepare the veggies: Once the sausage is cooked, remove it from the skillet and set aside. In the same skillet, add diced bell pepper and onion. Cook until softened, about 3-4 minutes.
- Scramble the eggs: Pour the whisked eggs into the skillet with the vegetables. Gently stir to scramble until just cooked but still creamy.
- Combine ingredients: Add the cooked sausage back to the skillet and sprinkle the shredded cheddar cheese on top. Allow the cheese to melt slightly.
- Finish with cilantro: Remove from heat and stir in the chopped cilantro.
- Assemble your burritos: Lay a tortilla on a clean surface. Spoon a portion of the mixture onto the tortilla, fold the sides over, and roll tightly.
- Repeat and serve: Repeat with remaining tortillas and filling. Serve warm or wrap in foil for later.
Notes
Ingredient quality matters for improved flavor. Store wrapped burritos in the refrigerator for up to 5 days, or freeze for up to 3 months. Reheat in the microwave or oven before serving.
