Cheese Filling
  • 1 cup shredded mozzarella cheese Using part-skim mozzarella yields gooeyness without overpowering the flavor.
  • 1/2 cup grated Parmesan cheese Choose a high-quality Parmesan for the best flavor.
Dough and Seasoning
  • 1/3 cup melted butter Ensure it is unsalted and melted for richness.
  • 1 tablespoon garlic powder Fresh garlic can be used but garlic powder provides a uniform flavor.
  • 1 tablespoon dried parsley Fresh parsley can be substituted, just chop finely.
  • 1 can (16.3 oz) refrigerated biscuit dough Classic buttermilk biscuit dough is recommended for fluffiness.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix shredded mozzarella, grated Parmesan, garlic powder, and dried parsley until combined.
  3. Open the biscuit dough and flatten each biscuit into a 4-inch circle.
  4. Place a spoonful of the cheese mixture in the center of each biscuit.
  5. Fold and pinch the edges of the dough together to seal the cheese inside.
  6. Arrange the filled dough balls seam-side down on the baking sheet.
  7. Brush each dough ball with melted butter.
  8. Bake for 15-20 minutes or until golden brown and cooked through.
  9. Let them cool slightly before serving.

Notes

Store in an airtight container for up to 3 days in the fridge or freeze for up to 2 months. Assemble a day in advance and refrigerate. Be careful not to overfill the dough.
