Preparation
  1. Preheat your oven to 350 degrees F.
  2. Spray an 8x8-inch baking dish with nonstick cooking spray.
  3. In a large bowl, stir together the melted butter and brown sugar until well combined.
  4. Beat in the large eggs and then the egg yolk one at a time, mixing well after each addition. Add in the vanilla extract and mix until combined.
  5. In a medium bowl, whisk together the flour, cornstarch, baking powder, salt, and apple pie spice until well blended.
  6. Gradually add the dry mixture to the butter mixture, stirring until fully incorporated; be careful not to overmix.
  7. Gently fold in the diced Granny Smith apples.
Baking
  1. Spread the batter evenly into the prepared baking dish.
  2. Bake for 50-55 minutes, or until the edges are golden brown and the center is set. A toothpick inserted in the middle should come out clean.
  3. Let the cake cool completely in the baking dish. Once cooled, drizzle generously with caramel sauce.
