- Heat the olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook until browned, about 4-6 minutes.
- Add the chopped onion and bell peppers to the skillet, sautéing until they are softened, roughly 4-5 minutes.
- Stir in the minced garlic and cook for about 1 minute until fragrant.
- Add the rice and Cajun seasoning, stirring thoroughly to coat the rice well.
- Pour in the hot chicken broth, bringing the mixture to a simmer. Cover the skillet and cook until the rice is tender, about 18-22 minutes.
- Once done, fluff the rice with a fork and season with salt and freshly ground black pepper to taste before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days. You can freeze this dish for up to 3 months.
