Ingredients

Pasta and Protein
  • 8 oz spaghetti I recommend Barilla for a perfect al dente texture.
  • 1 lb chicken breast Use high-quality organic chicken for the best flavor.
  • 2 tbsp Cajun seasoning Frankly Fancy or Slap Ya Mama brands pack a great punch!
For the Sauce
  • 4 tbsp unsalted butter For a nutty and rich base, remember to let it sit at room temperature to soften.
  • 6 cloves garlic, minced Fresh garlic brings vibrant flavor — skip the jarred stuff if you can!
  • 1 cup heavy cream Opt for organic for a richer taste.
  • 1 cup shredded mozzarella cheese Go for fresh mozzarella for the ultimate creaminess.
  • to taste Salt and pepper Always use fresh ground pepper for the best bite.
  • to taste Fresh parsley for garnish Adds a beautiful pop of color!

Method

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente (about 8-10 minutes). Reserve 1 cup of pasta water before draining.
Cooking the Chicken
  1. While the pasta cooks, season the chicken breasts generously with Cajun seasoning.
  2. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once hot, add the chicken and cook for 5-7 minutes per side, until cooked through and juices run clear. Remove from the skillet and let rest before slicing.
Making the Sauce
  1. In the same skillet, lower the heat to medium and add remaining butter. Sauté minced garlic until fragrant (about 30 seconds).
  2. Pour in heavy cream, stirring constantly. Allow it to simmer on low for about 3-5 minutes until slightly thickened.
Combining Everything
  1. Add mozzarella cheese to the sauce, stirring until melted and creamy. If it’s too thick, add reserved pasta water a tablespoon at a time.
  2. Toss the cooked spaghetti with the sauce until well coated, and serve with sliced chicken on top.

Notes

Use a Cast Iron Skillet for nicely seared chicken. Grate your own cheese for best melting. Adjust spice as desired.
