  • 8 oz rotini I prefer Barilla for its texture
  • 1 lb ground beef Choose organic if possible for quality
Vegetables
  • 1 bell pepper, diced
  • 1 small onion diced
  • 2 cloves garlic, minced Fresh is best
Sauces and Seasonings
  • 2 tbsp Cajun seasoning Homemade or store-bought (Tony Chachere's is a go-to)
  • 1 cup tomato sauce Use San Marzano for rich flavor
  • 1 cup chicken broth Low-sodium is preferred
Cheese and Oil
  • 1 cup shredded cheddar or pepper jack Because cheese makes everything better!
  • 1 tbsp olive oil For sautéing
Seasoning
  • Salt and Pepper To taste
Garnish
  • Fresh Parsley For garnish

Method
 

Cooking the Pasta
  1. In a large pot, bring salted water to a boil. Add the rotini and cook according to package instructions until al dente. Drain and set aside.
Sautéing the Vegetables
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic, onions, and bell pepper. Sauté until the onions are translucent.
  2. Pay attention to the garlic; it can burn quickly, altering the dish's flavor dramatically.
Browning the Beef
  1. Increase the heat to medium-high and add the ground beef to the skillet. Stir until browned. Drain excess fat if necessary.
  2. Ensure you break the meat into small pieces while cooking to achieve even browning.
Adding Seasoning and Sauce
  1. Stir in Cajun seasoning, tomato sauce, and chicken broth. Bring to a simmer, allowing all flavors to meld together beautifully.
Combining with Pasta
  1. Add the cooked rotini to the sauce. Toss until the pasta is well-coated and everything is heated through.
Adding Cheese
  1. Sprinkle cheese over the top and cover, allowing it to melt blissfully.
Garnishing and Serving
  1. Serve hot, topped with freshly chopped parsley.

Notes
