Ingredients

Main Ingredients
  • 1 pound Steak (sirloin or ribeye) Look for cuts with good marbling for maximum flavor.
  • 12 ounces Parmesan Tortellini Fresh from the deli section works best, but frozen will do in a pinch.
  • 4 tablespoons Butter Preferably unsalted, let it sit at room temperature.
  • 4 cloves Garlic Minced. Avoid pre-minced for best flavor.
  • 1 cup Heavy Cream For a rich, creamy sauce.
  • 1 cup Parmesan Cheese Grated, freshly grated is best.
  • to taste Salt For seasoning.
  • to taste Pepper For seasoning.
  • Fresh Parsley For garnish, optional.

Method

Preparation
  1. Gather all your ingredients. Chop your garlic, grate the cheese, and let your butter sit at room temperature.
Cook the Tortellini
  1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package directions (usually around 3-4 minutes). Drain and set aside.
Sear the Steak
  1. Once the butter is sizzling, add the steak in a single layer. Cook for about 2-3 minutes per side for medium-rare, or until your desired doneness is reached. Use a meat thermometer; aim for 130°F for medium-rare.
Create the Garlic Sauce
  1. Pour in the heavy cream and let it simmer for 2-3 minutes, thickening slightly.
Incorporate the Tortellini
  1. Stir in the cooked tortellini and grated Parmesan cheese, tossing to coat evenly.
Combine and Serve
  1. Garnish with fresh parsley and extra Parmesan cheese before serving.

Notes

Don’t overcrowd the pan while cooking the steak. Let it rest if cooking a larger cut. Quality ingredients matter. You can prepare the sauce ahead and store leftovers in an airtight container for up to 3 days.
