Ingredients
  

For the Noodles
  • 4.2 oz Pine Brand tapioca starch (plus extra for dusting) Reliable choice for excellent texture; check moisture content.
  • 0.9 oz Pine Brand mung bean starch
  • 2/3 cup water Use boiling water mixed with food coloring.
  • 5 drops green food coloring Feel free to adjust for different colors.
For the Syrup and Coconut Milk
  • 1 1/4 cup coconut water or regular water
  • 3/4 cup sugar Adjust sweetness to preference.
  • 1 piece pandan leaf Knot-tied for infusion.
  • 1 cup coconut milk For richer flavor, consider high-quality coconut cream.
  • 1/2 cup coconut water
  • 1/8 teaspoon table salt
  • 5 pieces sweet jackfruit (fresh or canned, julienned) Look for canned jackfruit at local Asian markets.

Method
 

Make the Syrup
  1. In a small pot, combine 1 1/4 cup coconut water with a knot-tied pandan leaf. Simmer on low heat for 5 minutes. Whisk in 3/4 cup sugar until it dissolves completely, then allow it to cool.
Prepare the Coconut Milk
  1. In a separate pot, mix 1 cup coconut milk, 1/2 cup coconut water, and 1/8 teaspoon table salt. Add another pandan leaf and simmer on low heat for 5 minutes. Let it cool completely.
Create the Noodles
  1. In a heat-proof bowl, whisk together 4.2 oz of tapioca starch and 0.9 oz of mung bean starch. Gradually add 2/3 cup boiling water mixed with 5 drops of green food coloring, stirring until a rough dough forms. Knead until smooth, then roll out and cut into noodles.
Cook the Noodles
  1. Bring water to a boil in a pot. Carefully drop in your noodles. They’re ready when they float to the surface (about 1-2 minutes). Transfer them to a bowl of ice-cold water to cool.
To Serve
  1. In serving bowls, layer the noodles, top with julienned jackfruit, drizzle with the syrup, and finish with the coconut milk. Don’t forget to add lots of ice to keep it chilled and refreshing!

Notes

For a beautiful presentation, layer the ingredients artfully in clear bowls. Store any leftover noodles in an airtight container in the refrigerator for up to 2 days. Prepare the syrup and coconut milk a day ahead and store separately.
