- In a medium saucepan, bring the sugar and water to a boil over medium-high heat, stirring frequently to help dissolve the sugar, about 2 minutes.
- Once the sugar has dissolved, add the blueberries and continue to simmer at a gentle boil for 2 more minutes.
- Use a potato masher to gently crush any blueberries that haven’t completely burst to release their juices.
- Remove the saucepan from the heat and allow the syrup to steep as it cools to room temperature, about 30-45 minutes.
- Use a fine-mesh strainer to pour the mixture into a container, separating the solids from the syrup.
- Transfer the strained Blueberry Simple Syrup into a glass jar with a tight lid and store it in the fridge for up to two weeks.
Notes
Avoid burning the sugar by stirring continuously and you can balance sweetness with lemon juice post-straining.
