Syrup Ingredients
  • 1 cup granulated sugar Substitute half with brown sugar for a richer flavor.
  • 1 cup filtered water Filtered water gives the best results.
  • 2 cups blueberries (fresh or frozen) Use fresh when in season or unsweetened frozen if not.

Method
 

Preparation
  1. In a medium saucepan, bring the sugar and water to a boil over medium-high heat, stirring frequently to help dissolve the sugar, about 2 minutes.
  2. Once the sugar has dissolved, add the blueberries and continue to simmer at a gentle boil for 2 more minutes.
  3. Use a potato masher to gently crush any blueberries that haven’t completely burst to release their juices.
  4. Remove the saucepan from the heat and allow the syrup to steep as it cools to room temperature, about 30-45 minutes.
  5. Use a fine-mesh strainer to pour the mixture into a container, separating the solids from the syrup.
  6. Transfer the strained Blueberry Simple Syrup into a glass jar with a tight lid and store it in the fridge for up to two weeks.

Notes

Avoid burning the sugar by stirring continuously and you can balance sweetness with lemon juice post-straining.
