Preparation
- In a blender, combine the blueberries, maple syrup, and vanilla extract. Blend until smooth, about 30 seconds.
- In a medium bowl, combine the blueberry mixture with Greek yogurt using a spatula to fold until fully incorporated.
- Pour the mixture into popsicle molds, filling them about 3/4 full.
- Insert popsicle sticks, cover, and freeze for at least 4 hours or overnight.
- To unmold, let the popsicles sit at room temperature for 5 minutes, then run under warm water to release them.
Notes
Store leftover popsicles in an airtight container in the freezer for up to 2 months. Prepare them ahead of time for parties!
