Ingredients

Main Ingredients
  • 1 cup blueberries (fresh or frozen) Use ripe, organic blueberries for the best flavor.
  • 1 tbsp maple syrup Look for pure maple syrup for maximum flavor.
  • 1 tsp vanilla extract Use pure vanilla extract for better taste.
  • 1 cup plain Greek yogurt (full fat) Full-fat yogurt gives a creamier texture.

Method

Preparation
  1. In a blender, combine the blueberries, maple syrup, and vanilla extract. Blend until smooth, about 30 seconds.
  2. In a medium bowl, combine the blueberry mixture with Greek yogurt using a spatula to fold until fully incorporated.
  3. Pour the mixture into popsicle molds, filling them about 3/4 full.
  4. Insert popsicle sticks, cover, and freeze for at least 4 hours or overnight.
  5. To unmold, let the popsicles sit at room temperature for 5 minutes, then run under warm water to release them.

Notes

Store leftover popsicles in an airtight container in the freezer for up to 2 months. Prepare them ahead of time for parties!
