  • 0.75 cup butter (melted and cooled) Unsalted butter recommended for better control over sweetness.
  • 2 cups fresh blueberries Frozen blueberries can be used if thawed and drained.

  • 1 tbsp lemon juice Adds a splash of freshness.
  • 1 tbsp cornstarch Helps thicken blueberry filling.

Method
 

Preparation
  1. Preheat your oven to 350° F. Prepare an 8-inch square baking pan by buttering or spraying with cooking oil, or lining it with parchment paper.
  2. In a large bowl, combine the oats, flour, brown sugar, and salt. Mix well.
  3. Pour the melted and cooled butter into the dry mixture. Stir until combined and crumbly.
  4. Take half of the oat mixture and press it firmly into the bottom of the prepared pan to form an even crust layer.
Filling and Baking
  1. In another large bowl, combine the blueberries, lemon juice, sugar, and cornstarch. Toss gently to coat the blueberries.
  2. Spread the blueberry mixture evenly over the pressed oat crust.
  3. Sprinkle the remaining oat mixture generously on top of the blueberries.
  4. Bake for 40-50 minutes, until the topping is golden brown and the filling is bubbly.
  5. Let the bars cool completely on a wire rack before slicing into squares.

Notes

Store at room temperature for up to 3 days or refrigerate for 1 week. For long-term storage, freeze for up to 2 months. Consider adding nuts or trying different berries to customize the bars.
