Ingredients
  

Base Ingredients
  • 1 cup unsweetened almond milk Can substitute with oat milk or coconut milk.
  • 1 cup blueberries Fresh or frozen/thawed; thaw if frozen.
  • 2 tbsp honey Can substitute with maple syrup or agave for a vegan option.
  • ½ teaspoon vanilla extract Enhances the overall flavor.
  • 4 tbsp chia seeds The main ingredient that thickens the pudding.

Method
 

Preparation
  1. Add the milk, blueberries, honey, and vanilla to a blender and blend until smooth, around 30 seconds to 1 minute.
  2. Transfer the mixture into two half-pint jars and stir 2 tablespoons of chia seeds into each jar.
  3. Cover the jars and refrigerate for at least two hours or overnight to set.
  4. Before serving, top the pudding with additional blueberries and granola or other toppings of your choice.

Notes

Store in an airtight container in the fridge for 4-5 days. If too thick, add a splash more milk to reach desired consistency.
