Blueberry Filling

Method
 

Preparation
  1. Preheat your oven to 450 degrees F (232 degrees C).
  2. Grease a skillet or baking pan with cooking spray.
  3. Grate the cold butter and place it in the freezer.
  4. Mix together the brown sugar and cinnamon; sprinkle about a tablespoon in the prepared pan and set the rest aside.
  5. In a large bowl, whisk together flour, granulated sugar, baking soda, and baking powder.
Mixing
  1. Incorporate the chilled grated butter into the flour mixture until crumbly.
  2. Pour in the buttermilk and mix until just combined; do not overmix.
  3. Gently fold in the blueberries.
Baking
  1. Shape the dough into 7 portions and place in the prepared pan.
  2. Brush the tops with heavy cream and sprinkle with cinnamon-sugar.
  3. Bake for 22-27 minutes until golden brown.
  4. Remove from oven and brush with melted butter before serving.

Notes

Serve warm with whipped cream or yogurt. Leftover biscuits can be stored in an airtight container for up to 2 days.
