For the Noodles and Vegetables
  • 8 ounces udon noodles Look for fresh or frozen udon noodles in the Asian aisle.
  • 2 tablespoons vegetable oil Use a neutral oil like canola or grapeseed.
  • 3 cloves garlic, minced Fresh for the best aromatic kick.
  • 1/2 cup beef broth Homemade is best; otherwise, store-bought works fine.

Method
 

Preparation
  1. Thinly slice the beef sirloin into strips and marinate with soy sauce, oyster sauce, sesame oil, cornstarch, and black pepper for at least 15 minutes.
  2. Cook the udon noodles according to package instructions, then drain and set aside.
Cooking
  1. Heat 2 tablespoons of vegetable oil in a large pan or wok over medium-high heat.
  2. Sauté minced garlic for about 30 seconds until fragrant.
  3. Add the marinated beef in a single layer and let it sear undisturbed for 1-2 minutes.
  4. Stir in sliced red and green bell peppers and onion, and stir-fry for another 2-3 minutes.
  5. Pour in beef broth and bring to a simmer.
  6. Mix in the cooked udon noodles and ensure they are well-coated with the sauce.
  7. Cook for an additional 1-2 minutes until heated through.
Serving
  1. Serve hot, garnished with chopped green onions.

Notes

Leftovers can be stored in an airtight container for up to three days. Marinate beef overnight for deeper flavor.
