Ingredients
  

Cheese mixture
  • 8 oz cream cheese, softened Use full-fat cream cheese for the best texture.
  • 1 cup shredded sharp cheddar cheese Opt for freshly shredded cheese instead of pre-shredded.
  • 1 tbsp smoked paprika Adds a beautiful smoky flavor.
  • 2 tbsp chopped fresh chives Substitute with green onions if necessary.
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
Coatings
  • Assorted coatings Choose from chopped pecans, crispy bacon bits, dried cranberries, fresh herbs, or everything bagel seasoning.
Optional serving items
  • Pretzel sticks These serve as handles for easy snacking.

Preparation
  1. In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese.
  2. Add smoked paprika, chopped chives, garlic powder, onion powder, and salt. Mix until creamy and well-blended.
  3. Cover the bowl with plastic wrap and refrigerate for 20 to 30 minutes.
Forming the Bites
  1. Using a teaspoon or small melon baller, scoop an even amount of the mixture and roll it into a 1-inch ball.
  2. Roll each ball in your choice of coating and press gently to adhere.
Final Chill and Serve
  1. Arrange the balls on a tray and refrigerate for at least 30 minutes to set.
  2. Serve on a platter and insert pretzel sticks into each ball for easy handling.

Notes

Store in an airtight container in the refrigerator for up to 5 days. You can make the cheese mixture a day in advance.
