- In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese.
- Add smoked paprika, chopped chives, garlic powder, onion powder, and salt. Mix until creamy and well-blended.
- Cover the bowl with plastic wrap and refrigerate for 20 to 30 minutes.
Forming the Bites
- Using a teaspoon or small melon baller, scoop an even amount of the mixture and roll it into a 1-inch ball.
- Roll each ball in your choice of coating and press gently to adhere.
Final Chill and Serve
- Arrange the balls on a tray and refrigerate for at least 30 minutes to set.
- Serve on a platter and insert pretzel sticks into each ball for easy handling.
Notes
Store in an airtight container in the refrigerator for up to 5 days. You can make the cheese mixture a day in advance.
