Ingredients
  

Sauce Ingredients
  • 1/2 cup orange juice freshly squeezed is best for a vibrant flavor
  • 3 tablespoons tamari sauce or gluten-free soy sauce Kikkoman is a great brand!
  • 2 tablespoons brown sugar dark brown works wonders for an extra depth of flavor
  • 1 tablespoon rice vinegar
  • 1 tablespoon minced ginger fresh ginger adds a delightful zing!
  • 2 teaspoons toasted sesame oil this adds an amazing earthly taste
  • 1 clove minced garlic
Thickener
  • 1 tablespoon cornstarch mixed with a little water if desired
Heat
  • 1 teaspoon chili paste sambal oelek or sriracha for a kick
Main Ingredients
  • 2 tablespoons peanut oil for that authentic fry
  • 8 oz top sirloin steak thinly sliced against the grain for tenderness
  • 12 oz asparagus trimmed and sliced diagonally
  • 8 oz cremini mushrooms sliced for an earthy addition
  • 2 teaspoons fresh thyme leaves or dried if you’re in a pinch!
  • 1 large red bell pepper cored, seeded, and sliced into half-inch strips
  • 1/2 cup cherry tomatoes halved for a pop of freshness

Method
 

Preparation
  1. Whisk all the sauce ingredients in a bowl or shake in a jar until well combined and set aside.
  2. Heat a wok or large skillet over high heat, adding 1 tablespoon of peanut oil until it begins to smoke.
Cooking
  1. Stir fry the mushrooms and thyme for about 2-3 minutes until tender and browned. Transfer to a plate when done.
  2. Add the remaining tablespoon of oil to the wok. Sear the sliced steak in batches, about 30 seconds per side until nicely browned. Transfer the beef to the plate with the mushrooms.
  3. Quickly stir fry the asparagus and red pepper for 1 minute until vibrant in color.
  4. Add 1 tablespoon of water to the pan to create steam, helping to cook the veggies while keeping them nice and crisp.
  5. Return the cooked steak and mushrooms to the pan, then pour the sauce over everything. Stir until the sauce thickens, about 1 minute.
  6. Transfer to a platter, add the cherry tomatoes, and serve immediately.

Notes

Make sure your ingredients are prepped and ready before starting. If your stir fry is feeling too thick, a splash of water can help loosen the sauce without losing flavor.
