Preparation
- Whisk all the sauce ingredients in a bowl or shake in a jar until well combined and set aside.
- Heat a wok or large skillet over high heat, adding 1 tablespoon of peanut oil until it begins to smoke.
Cooking
- Stir fry the mushrooms and thyme for about 2-3 minutes until tender and browned. Transfer to a plate when done.
- Add the remaining tablespoon of oil to the wok. Sear the sliced steak in batches, about 30 seconds per side until nicely browned. Transfer the beef to the plate with the mushrooms.
- Quickly stir fry the asparagus and red pepper for 1 minute until vibrant in color.
- Add 1 tablespoon of water to the pan to create steam, helping to cook the veggies while keeping them nice and crisp.
- Return the cooked steak and mushrooms to the pan, then pour the sauce over everything. Stir until the sauce thickens, about 1 minute.
- Transfer to a platter, add the cherry tomatoes, and serve immediately.
Notes
Make sure your ingredients are prepped and ready before starting. If your stir fry is feeling too thick, a splash of water can help loosen the sauce without losing flavor.
