Wet Ingredients
  • 2 ripe bananas, mashed The riper, the better! Look for bananas with plenty of brown spots.
  • 0.5 cups fresh orange juice Use freshly squeezed for the best flavor.
  • 1 tablespoon orange zest Packs in that citrus punch.
  • 0.5 cups sugar You can opt for brown sugar for a deeper flavor.
  • 0.25 cups butter, melted Ensure it’s at room temperature to mix smoothly.
  • 1 egg, lightly beaten Adds moisture and richness.
  • 1 teaspoon vanilla extract A touch of vanilla goes a long way.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a standard loaf pan with butter or non-stick spray. Optionally, line it with parchment paper.
  3. In a medium mixing bowl, whisk together the dry ingredients: flour, baking soda, salt, and walnuts. Set aside.
  4. In a large bowl, combine the wet ingredients: mashed bananas, orange juice, orange zest, sugar, melted butter, beaten egg, and vanilla extract. Whisk until combined.
  5. Gradually add the dry mixture to the wet mixture. Stir gently until just combined, taking care not to overmix.
Baking
  1. Pour the batter into the greased loaf pan.
  2. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  2. Once cool, slice and serve.

Notes

Store Banana Orange Walnut Bread in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week or freeze for up to 3 months.
