Preparation
  1. In a blender, combine the ripe bananas, milk, vanilla extract, and sweetener. Blend until silky smooth, about 30-60 seconds.
  2. Pour the banana mixture into a mixing bowl, and quickly stir in the chia seeds. Mix well to prevent clumping.
  3. Let the mixture sit for about 5 minutes, then stir again to evenly distribute the chia seeds.
  4. Cover the bowl or transfer to jars and refrigerate for at least 2 hours or overnight until thickened.
  5. Once thick, scoop the pudding into jars or bowls and add your favorite toppings.

Notes

Best consumed fresh, but can be stored in airtight containers in the fridge for up to 5 days. Experiment with flavors by adding cocoa powder or spices.
