Preparation
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it.
- In a large mixing bowl, combine olive oil, balsamic vinegar, soy sauce, minced garlic, black pepper, and salt. Whisk until well combined.
- Toss the mushrooms in the marinade until well coated.
- Arrange the mushrooms in a single layer on the prepared baking sheet.
Cooking
- Roast the mushrooms in the preheated oven for 20-25 minutes, stirring halfway through, until golden brown and tender.
Serving
- Remove from the oven, sprinkle with freshly chopped parsley, and serve hot.
- Optionally, drizzle extra balsamic glaze on top before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. These mushrooms can also be added to salads or omelets.
