  • 2 medium-sized zucchinis, grated Fresh zucchinis are ideal for flavor and texture, but you can use frozen if needed.
  • 1 cup cooked mashed sweet potato Roast for best flavor—don't skip it!
  • 1 teaspoon garlic powder For that lovely aromatic flavor!
  • ½ teaspoon sea salt Adjust to taste.
  • ½ teaspoon black pepper Freshly ground for robust flavor.
  • 2 tablespoons coconut flour Great for binding; substitute with almond flour if preferred.

Preparation
  1. Preheat your oven to 160°C (350°F) and line a baking tray with parchment paper.
  2. In a large bowl, squeeze out all the moisture from the grated zucchini.
  3. In the now less-damp bowl, combine the squeezed zucchini, mashed sweet potato, garlic powder, sea salt, black pepper, and coconut flour. Mix everything until well incorporated.
  4. Using your hands, form tablespoon-sized tots and place them on the lined baking sheet.
Baking
  1. Bake for 30-35 minutes or until the tots turn slightly golden brown.
  2. Serve warm with your favorite dipping sauce.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days, or freeze for up to 1 month. Prepare the mixture ahead of time and freeze shaped tots for future cooking.
