Preparation
- In a large mixing bowl, combine the finely chopped broccoli, pumpkin purée, crushed crackers, egg, sea salt, black pepper, dried herbs, and grated Parmesan.
- Cover the bowl with plastic wrap and allow the mixture to rest in the fridge for 30 minutes.
Baking
- Preheat your oven to 180 degrees C (350 degrees F). Line a baking tray with baking paper and lightly spray it with olive oil spray.
- After the mixture has rested, scoop about 1 tablespoon of the mixture and shape it into an oval tot. Repeat until you've created about 42 tots.
- Arrange the tots on the lined baking tray about an inch apart and bake for about 30 minutes or until they turn golden brown.
- Remove from the oven and let them cool for a few minutes before serving with a dipping sauce.
