  • 1 cup crushed gluten-free crackers or breadcrumbs Brands like Schär or Kinnikinnick recommended.
  • 1 large egg Free-range for best texture.
  • 1/2 teaspoon sea salt Feel free to adjust to taste.
  • to taste black pepper Freshly ground for maximum flavor.
  • 2 teaspoons dried mixed herbs Italian seasoning or your favorite blend.
  • 1/4 cup grated Parmesan cheese Fresh-grated is always better.

Method
 

Preparation
  1. In a large mixing bowl, combine the finely chopped broccoli, pumpkin purée, crushed crackers, egg, sea salt, black pepper, dried herbs, and grated Parmesan.
  2. Cover the bowl with plastic wrap and allow the mixture to rest in the fridge for 30 minutes.
Baking
  1. Preheat your oven to 180 degrees C (350 degrees F). Line a baking tray with baking paper and lightly spray it with olive oil spray.
  2. After the mixture has rested, scoop about 1 tablespoon of the mixture and shape it into an oval tot. Repeat until you've created about 42 tots.
  3. Arrange the tots on the lined baking tray about an inch apart and bake for about 30 minutes or until they turn golden brown.
  4. Remove from the oven and let them cool for a few minutes before serving with a dipping sauce.

Notes

Ensure ingredients are at room temperature to blend properly. High-quality ingredients boost flavor. These tots can be stored in an airtight container in the fridge for up to 3 days. They freeze well for up to 3 months.
