Preparation
- Preheat your oven to 350°F (175°C).
- Prepare a 10-inch round cake pan by spraying it with cooking spray or lining it with parchment paper.
- Peel, core, and dice the apples. Set aside for later use.
Mixing
- In a mixing bowl, combine the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract and beat for 1 minute until blended.
- In another bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and allspice.
- Gradually add the dry ingredient mixture to the wet mixture and stir until just combined.
- Gently fold in the diced apples and chopped walnuts.
Baking
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for 45-55 minutes or until a toothpick comes out clean.
- Let the cake cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
Store leftover cake in an airtight container at room temperature for up to 3 days. Freezing options are available for longer storage.
