  • 1 cup granulated sugar Coconut sugar can be used for a healthier option.
  • 1/2 cup brown sugar (packed; dark brown enhances flavor)
  • 1 cup vegetable oil Melted coconut oil adds a subtle flavor twist.
  • 2 tsp vanilla extract Use pure vanilla extract for the best flavor.
Dry Ingredients
  • 2.5 cups flour Use gluten-free blend if necessary or all-purpose flour.
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp ground cinnamon Adds warmth and spice.
  • 1/4 tsp nutmeg For that classic autumn flavor.
  • 1/4 tsp allspice Optional, but great for added complexity.
Nutty Addition
  • 1 cup walnuts (chopped) Add as much as you prefer.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 10-inch round cake pan by spraying it with cooking spray or lining it with parchment paper.
  3. Peel, core, and dice the apples. Set aside for later use.
Mixing
  1. In a mixing bowl, combine the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract and beat for 1 minute until blended.
  2. In another bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and allspice.
  3. Gradually add the dry ingredient mixture to the wet mixture and stir until just combined.
  4. Gently fold in the diced apples and chopped walnuts.
Baking
  1. Pour the batter into the prepared cake pan and spread it evenly.
  2. Bake for 45-55 minutes or until a toothpick comes out clean.
  3. Let the cake cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

Store leftover cake in an airtight container at room temperature for up to 3 days. Freezing options are available for longer storage.
