Ingredients
  

For the Cake
  • 1.5 cups 1 1/2 cups all-purpose flour Use high-quality flour for the best texture.
  • 1 tsp 1 tsp baking powder
  • 0.5 tsp 1/2 tsp baking soda
  • 0.25 tsp 1/4 tsp salt
  • 1 tsp 1 tsp ground cinnamon Freshly ground if possible.
  • 0.5 cups 1/2 cup unsalted butter, softened Helps with easy creaming.
  • 1 cups 1 cup granulated sugar
  • 2 large 2 large eggs Room temperature for better emulsification.
  • 1 tsp 1 tsp vanilla extract Pure extract for a richer flavor.
  • 0.5 cups 1/2 cup sour cream Adds moisture and a delightful tang.
  • 2 cups 2 cups peeled and diced apples Recommended Granny Smith for a tart balance.
For the Crumb Topping
  • 1 cup 1 cup all-purpose flour
  • 0.5 cups 1/2 cup brown sugar Use light or dark, depending on your flavor preference.
  • 1 tsp 1 tsp ground cinnamon
  • 0.25 tsp 1/4 tsp salt
  • 0.5 cups 1/2 cup unsalted butter, melted Make sure it’s not too hot before adding.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C) and grease a 9x9-inch baking dish to prevent sticking.
  2. In a medium bowl, whisk together 1 1/2 cups of flour, baking powder, baking soda, salt, and 1 tsp of cinnamon.
  3. In a large mixing bowl, beat together 1/2 cup of softened butter and 1 cup of granulated sugar until light and fluffy—about 3-4 minutes.
  4. Incorporate 2 eggs, one at a time, blending well after each addition. Then stir in 1 tsp of vanilla extract and 1/2 cup of sour cream.
  5. Gradually add the dry mixture into the wet ingredients, mixing gently until just combined. Fold in 2 cups of diced apples.
  6. Pour the batter into your greased baking dish, smoothing the top with a spatula.
Crumb Topping
  1. In a separate bowl, combine 1 cup of flour, 1/2 cup of brown sugar, 1 tsp of cinnamon, and 1/4 tsp of salt.
  2. Pour in the melted butter and mix until crumbly.
Baking
  1. Sprinkle the crumb topping evenly over the cake batter.
  2. Place the dish in the oven and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean (a few moist crumbs are okay!).

Notes

Keep the crumb cake covered at room temperature for up to 3 days. You can refrigerate it for up to a week or freeze slices for up to 3 months. You can substitute sour cream with Greek yogurt for a lower-fat option.
