Preparation
- Preheat your oven to 350 degrees F (175 degrees C) and grease a 9x9-inch baking dish to prevent sticking.
- In a medium bowl, whisk together 1 1/2 cups of flour, baking powder, baking soda, salt, and 1 tsp of cinnamon.
- In a large mixing bowl, beat together 1/2 cup of softened butter and 1 cup of granulated sugar until light and fluffy—about 3-4 minutes.
- Incorporate 2 eggs, one at a time, blending well after each addition. Then stir in 1 tsp of vanilla extract and 1/2 cup of sour cream.
- Gradually add the dry mixture into the wet ingredients, mixing gently until just combined. Fold in 2 cups of diced apples.
- Pour the batter into your greased baking dish, smoothing the top with a spatula.
Crumb Topping
- In a separate bowl, combine 1 cup of flour, 1/2 cup of brown sugar, 1 tsp of cinnamon, and 1/4 tsp of salt.
- Pour in the melted butter and mix until crumbly.
Baking
- Sprinkle the crumb topping evenly over the cake batter.
- Place the dish in the oven and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean (a few moist crumbs are okay!).
