  • 1 1/2 ounces simple syrup Easily made by dissolving equal parts sugar and hot water.
Juices and Alcohol
  • 1 ounce lime juice Freshly squeezed is best.
  • 2 ounces light rum Use a good quality light rum.
  • 2 ounces apple cider Choose a fresh, no-preservatives option.
Finishing Touches
  • club soda Adds a bubbly finale. Can use flavored seltzers.
  • crushed ice From home freezer or crushed manually.
  • sliced apples Use crisp, sweet apples like Honeycrisp or Fuji for garnish.
  • mint leaves For garnish.

Method
 

Preparation
  1. In a cocktail shaker, add fresh mint leaves and simple syrup. Muddle gently for about 10-15 seconds.
  2. Pour in lime juice, light rum, and apple cider. Add crushed ice.
  3. Seal the shaker and shake vigorously for 10-15 seconds until well mixed and chilled.
Serving
  1. Fill two highball glasses with crushed ice.
  2. Strain the mojito mixture into the glasses over the ice. Top with club soda.
  3. Garnish with apple slices and mint leaves.

Notes

For a sweeter drink, adjust the amount of simple syrup. Store leftovers in the fridge for up to 24 hours, sans soda.
