- In a cocktail shaker, add fresh mint leaves and simple syrup. Muddle gently for about 10-15 seconds.
- Pour in lime juice, light rum, and apple cider. Add crushed ice.
- Seal the shaker and shake vigorously for 10-15 seconds until well mixed and chilled.
Serving
- Fill two highball glasses with crushed ice.
- Strain the mojito mixture into the glasses over the ice. Top with club soda.
- Garnish with apple slices and mint leaves.
Notes
For a sweeter drink, adjust the amount of simple syrup. Store leftovers in the fridge for up to 24 hours, sans soda.
