Ingredients
  

Fresh Vegetables
  • 1 cup broccoli florets Look for bright green with no yellowing.
  • 1 cup cremini mushrooms Large ones can be halved or quartered for even cooking.
  • 1/2 cup thinly sliced carrots About two small-medium, peeled for sweetness.
  • 1 small zucchini Sliced; fresh and firm is best.
  • 1 small red bell pepper Roughly diced; adds a pop of color.
  • 1 small-medium red onion Roughly diced; sweet and slightly tangy.
Seasoning and Garnish
  • 2 teaspoons olive oil Extra virgin recommended for depth of flavor.
  • 1 tablespoon balsamic vinegar Choose a good quality for richness.
  • 2 cloves garlic Minced; the more the merrier!
  • 1 teaspoon Italian seasoning A blend of herbs—think of it as a hug for your veggies.
  • 1/2 teaspoon garlic powder For that extra punch.
  • 1 tablespoon grated parmesan cheese Optional but highly recommended.
  • Salt and ground black pepper To taste.

Method
 

Preparation
  1. Preheat your air fryer to the highest temperature setting (around 400°F/200°C) for about 5 minutes.
  2. In a large mixing bowl, combine all prepared vegetables with olive oil, balsamic vinegar, minced garlic, Italian seasoning, garlic powder, and salt and pepper to taste. Toss until well coated.
Cooking
  1. Place the seasoned vegetables in the hot air fryer basket, cooking in batches if necessary to avoid overcrowding.
  2. Set the air fryer to 390°F (200°C) and cook for 7-8 minutes, shaking the basket halfway through.
  3. If using parmesan cheese, sprinkle it on the veggies after the initial timer goes off, then return to the air fryer for an additional 3-8 minutes until fork-tender and golden brown.

Notes

Store leftover air fryer vegetables in an airtight container in the fridge for up to 3 days. You can reheat them in the air fryer to get them crispy again. For extra flavor variations, consider trying Mediterranean seasoning or Asian flavors.
