Preparation
- Preheat your air fryer to the highest temperature setting (around 400°F/200°C) for about 5 minutes.
- In a large mixing bowl, combine all prepared vegetables with olive oil, balsamic vinegar, minced garlic, Italian seasoning, garlic powder, and salt and pepper to taste. Toss until well coated.
Cooking
- Place the seasoned vegetables in the hot air fryer basket, cooking in batches if necessary to avoid overcrowding.
- Set the air fryer to 390°F (200°C) and cook for 7-8 minutes, shaking the basket halfway through.
- If using parmesan cheese, sprinkle it on the veggies after the initial timer goes off, then return to the air fryer for an additional 3-8 minutes until fork-tender and golden brown.
Notes
Store leftover air fryer vegetables in an airtight container in the fridge for up to 3 days. You can reheat them in the air fryer to get them crispy again. For extra flavor variations, consider trying Mediterranean seasoning or Asian flavors.
