Teriyaki Marinade
  • 1/4 cup soy sauce Use gluten-free if needed.
  • 1/4 cup mirin This sweet rice wine adds depth.
  • 1/4 cup brown sugar Can replace with honey or maple syrup.
  • 1/2 tsp garlic powder Fresh garlic can be used as well.
  • 1/2 tsp dried ginger Fresh ginger is better if you have it.

Method

Preparation
  1. Trim any visible fat from the chicken thighs.
  2. Marinate the chicken in soy sauce, mirin, brown sugar, garlic powder, and ginger for at least 30 minutes.
  3. Preheat the air fryer to 400°F (200°C).
Cooking
  1. Place the marinated chicken in a single layer in the air fryer and cook for 15 minutes.
  2. Prepare the remaining teriyaki sauce by boiling it in a saucepan over medium heat until thickened, about 10 minutes.
  3. After 15 minutes, brush the thickened sauce over the chicken and cook for an additional 5 minutes.
Serving
  1. Brush with additional teriyaki sauce before serving.

Notes

Store leftovers in an airtight container for up to 4 days. Marinate chicken a day in advance for deeper flavor. Avoid overcrowding the air fryer.
