Main Ingredients
  • 1 pound carrots (about 5-6 medium carrots) Choose firm, vibrant carrots for the best flavor.
  • 1 tablespoon olive oil Extra virgin olive oil adds a nice flavor.
  • ¼ teaspoon dried thyme Can be swapped for rosemary or oregano.
  • to taste salt & pepper Freshly ground black pepper and sea salt enhance the flavors.
  • 1 tablespoon butter Use room-temperature butter for even melting.
  • ½ tablespoon runny honey Caramelizes beautifully during cooking.

Method
 

Preparation
  1. Preheat your air fryer at 375°F (195°C) for about 5 minutes.
  2. Trim off the ends of the carrots, peel them, and cut them into spears.
  3. Place the carrot spears in a large bowl and add olive oil, dried thyme, salt, and pepper. Toss until evenly coated.
Cooking
  1. Lay the seasoned carrots in a single layer inside the preheated air fryer basket.
  2. Air fry the carrots at 375°F for 12-15 minutes, shaking the basket halfway through.
  3. Once done, transfer the hot carrots to a serving bowl and toss with room-temperature butter and runny honey.

Notes

Any leftovers can be stored in an airtight container in the fridge for up to three days. They can be reheated in the air fryer at 350°F (175°C) for about 3-5 minutes to regain crispiness. You can prep the carrots and keep them covered in the fridge for up to 24 hours before air frying.
